  • Colombian style chicken and rice we boil a whole chicken with some veggies, get the chicken out and cook the rice in the stock. We make the "ahogao" or the tomato/onion sauce thing on the side and fry the veggies (red/green pepper, carrots and peas) and shred the chicken off the bone. When the rice is almost ready we add everything together and let it finish up cooking in a single pot.

  • I have made this twice already. First time was the Biryani style with Garam Masala in the dry rub and the yoghurt/ginger/onion aromatic base. Everyone loved it! Made it again tonight but with Thai flavours. The dry rub had coconut and dried lime rind in the spice grinder then added powdered ginger, garlic powder, and cayenne along with the salt, of course. The aromatic paste had onion, garlic, ginger, a frozen cube of chili pepper (trying to use what I have), and a tbsp of Thai red curry paste. When I tossed the rice in I also added some red bell pepper strips, and then coconut milk and water for the liquid and finished with some fish sauce and brown sugar. Oh, used jasmine rice. It was amazing and a great heat. My sons were blown away and also thrilled that it only used one pot and a cutting board - they do the dishes in our house! Thanks too for the amazing information about soaking the rice longer and leaving the chicken to dry and sit with the rub and then searing the h**l out of it to make it crispy. I'm sure mine wasn't as good as you would have made it but it has become a go-to dish on our menus list. Keep up the amazing videos!!

  • Yes, please! Yes, please keep teaching us actually useful stuff, pretty please with heaps of hope on top? Amazingly, I can find all this stuff locally, which makes me a fan! The stuff you made on a different channel, I would have to order some of the ingredients from online merchants who may or may not be trustworthy. Not that all the local merchants are trustworthy, but I like to pretend they are because there isn't many other options. Then again, maybe they are trustworthy, but not when it comes to certain things...

  • I really enjoy your style of tutorial. Very approachable and beginner friendly. Things like listening to your rice, watching for bubbles to determine perfect temp, seeing the paste transform are all things I had to learn trial and error. My mom always said "you just know" which irritated me as a beginner but now that I'm pretty great in the kitchen I can say it's more about that small stuff you get to know as you cook.

  • Solhas cooking is a lot similar to indian cooking. The cooking of the sauce is called buna masala which is used in the asian countries and for non pressure cooked rice basmati is usually the best cause it cooks quickly and its aroma enhanches the dishes. She seems to know her art well. And she finally made the biriyani there you go.

  • Outside of frying, this is probably the most delicious chicken I've ever made. The rice was meh. It's hard to get the boiling / simmer technique correct to cook the rice. Perhaps I'm spoiled by cooking rice in rice cookers / instant pots.

  • Made the first version today; it turned out pretty well! Notes for next time are to have the pan on lower heat while searing the chicken to fully render the fat from the skin before it starts to burn, and have the pan on slightly higher heat while the rice cooks since I turned it too far down.
